Double Bacon Cheeseburger with Special Sauce

Double Bacon Cheeseburger with Special Sauce 🍔🥓🧀
Ingredients:
1 lb ground beef (80/20)
Salt and pepper to taste
4 slices cheddar cheese
6 slices crispy bacon
2 brioche buns
2 tablespoons unsalted butter (for toasting the buns)
For the special sauce:
1/4 cup mayonnaise
1 tablespoon ketchup
1 teaspoon Dijon mustard
1 teaspoon pickle juice
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
Instructions:
1️⃣ Prepare the patties: Divide the ground beef into 4 equal portions and form into thin patties. Season with salt and pepper on both sides.
2️⃣ Cook the bacon: In a skillet, cook the bacon until crispy. Drain on a paper towel and set aside.
3️⃣ Cook the patties: In the same skillet (or on a grill), cook the patties over medium-high heat for about 2-3 minutes per side. Add a slice of cheddar cheese on top of each patty and let it melt.
4️⃣ Make the special sauce: In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, pickle juice, garlic powder, and smoked paprika.
5️⃣ Toast the buns: Spread butter on the inside of the brioche buns and toast them in the skillet until golden and crispy.
6️⃣ Assemble the burger: Spread a generous amount of special sauce on the bottom bun. Add one patty, a couple of slices of bacon, then the second patty, and more bacon. Top with the other bun.
7️⃣ Serve: Enjoy immediately with fries or your favorite side!
Notes:
Add lettuce, tomatoes, or pickles for extra crunch.
For a spicy kick, add jalapeños or hot sauce to the special sauce.
