Double Chocolate Zucchini Bread
Ingredients:
– 1 cup grated zucchini (about 1 medium zucchini)
– 1 cup all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1/2 cup sugar
– 1/2 cup brown sugar, packed
– 1/2 cup vegetable oil
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup chocolate chips (milk or dark)
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a medium bowl, combine the grated zucchini, vegetable oil, eggs, and vanilla extract. Mix well until smooth.
3. In another large bowl, whisk together the flour, cocoa powder, sugar, brown sugar, baking soda, baking powder, and salt until evenly mixed.
4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix!
5. Gently fold in the chocolate chips, ensuring even distribution throughout the batter.
6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
8. Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes:
Feel free to swap some of the chocolate chips for nuts or dried fruit for added flavor!
This bread is delicious on its own but can also be enjoyed with a dollop of whipped cream or a spread of nut butter.
