Ingredients:
– 1 kg pork, sliced into thin pieces
– 1 head garlic, minced
– 1/2 cup brown sugar
– 1/4 cup calamansi juice
– 1/2 cup soy sauce
– 1/2 cup banana ketchup
– 1/2 cup beer, sprite, or 7-Up
– 1/2 teaspoon ground black pepper
– 1 teaspoon salt
– Banana ketchup + cooking oil (for basting)
Instructions:
1. Marinate Pork: In a clean bowl, combine the sliced pork, minced garlic, brown sugar, calamansi juice, soy sauce, banana ketchup, beer (or sprite/7-Up), and ground black pepper. Mix well. Transfer to a container with a tight-fitting lid and marinate in the refrigerator overnight.
2. Assemble Skewers: The next day, thread the marinated pork onto skewers.
3. Prepare Grill: Heat charcoal in a grill.
4. Grill Pork: Place the skewers on the hot grill and cook, basting both sides with a mixture of banana ketchup and cooking oil. Grill until the pork is cooked through and lightly browned on both sides (avoid burning).
5. Serve: Remove the skewers from the grill and place them on a serving plate. Serve with your favorite dipping sauce.
