Ingredients: 2 tablespoons olive oil
1 pound chicken breast, diced
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
1 cup basmati rice
2 cups chicken broth
1 cup corn kernels (fresh or frozen, thawed)
1/4 cup mayo
2 tablespoons fresh lime juice
1/2 teaspoon garlic powder
Salt and black pepper to taste
1/4 cup feta cheese, crumbled
Fresh cilantro, chopped (for garnish)
Directions: 1; Heat the olive oil in a large skillet over medium heat. Add the diced chicken.
