Fried Strawberry Cheesecake Sandwiches

Ingredients
For the Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract
1/2 cup diced fresh strawberries
For the Sandwiches:
8 slices of white or brioche bread
2 large eggs
1/4 cup milk
1/4 tsp ground cinnamon
1/2 tsp sugar (optional)
2 tbsp butter (for frying)
Powdered sugar for dusting
Optional Garnish:
Additional fresh strawberries
Whipped cream
Strawberry sauce or syrup
Directions
Make the Cheesecake Filling:
In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold in the diced strawberries and set aside.
Assemble the Sandwiches:
Spread a generous layer of the cheesecake filling on one slice of bread.
Top with another slice of bread, pressing down gently to seal the edges.
Repeat with the remaining bread and filling.
Prepare the Egg Mixture:
In a shallow bowl, whisk together the eggs, milk, cinnamon, and sugar (if using).
Dip the Sandwiches:
Heat a large skillet over medium heat and melt 1 tablespoon of butter.
Dip each sandwich into the egg mixture, coating both sides thoroughly.
Fry the Sandwiches:
Place the dipped sandwiches into the skillet and fry until golden brown on both sides, about 2-3 minutes per side.
Work in batches if necessary, adding more butter to the skillet as needed.
Serve:
Dust the fried sandwiches with powdered sugar and serve warm.
Garnish with fresh strawberries, whipped cream, or strawberry sauce if desire
