Garlic Sausage Alfredo Rigatoni
Ingredients:
12 ounces rigatoni pasta
1 tablespoon olive oil
1 pound Italian sausage (pork or chicken)
4 cloves garlic, minced
1 teaspoon red pepper flakes (optional)
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside.
Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned and cooked through, about 7-8 minutes. Remove excess fat if necessary.
Add Garlic and Red Pepper Flakes: Add the minced garlic and red pepper flakes (if using) to the skillet with the sausage. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant.
Make the Alfredo Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.
Add Cheese: Stir in the grated Parmesan and shredded mozzarella cheese. Continue cooking for 2-3 minutes, until the sauce is smooth and creamy. Season with salt and pepper to taste.
Combine with Pasta: Add the cooked rigatoni to the skillet and toss to coat with the creamy sausage sauce. If the sauce is too thick, add a little more chicken broth to reach your desired consistency.
Serve: Garnish with freshly chopped parsley and serve immediately. Enjoy this rich and creamy pasta dish!
