Ghost Pepper Jalapeño Popper Meatloaf
Ingredients:
2 pounds ground beef
1 cup breadcrumbs
2 eggs, beaten
1/4 cup milk
4 ounces cream cheese, softened
1 cup shredded cheddar cheese
3 jalapeños, diced (seeds removed for less heat)
1 teaspoon ghost pepper hot sauce (adjust to your spice level!)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
1/2 cup ketchup (optional, for topping)
Instructions:
Prep the filling: In a small bowl, mix cream cheese, cheddar cheese, diced jalapeños, and ghost pepper hot sauce. Set aside.
Mix the meatloaf: Combine ground beef, breadcrumbs, eggs, milk, garlic powder, onion powder, smoked paprika, salt, and pepper in a large bowl. Mix gently until just combined—don’t overwork it!
Assemble: Flatten half the meat mixture into a loaf shape on a baking sheet lined with parchment paper. Spoon the jalapeño popper filling on top, leaving a border. Cover with the remaining meat mixture, sealing the edges.
Bake it up: Spread ketchup over the top if you like, and bake at 375°F for 50-60 minutes. Let it rest for 10 minutes before slicing.
Serve with flair: This meatloaf brings bold, fiery flavor to the table—serve with a cool ranch dressing or sour cream to balance the heat.
