Ground Beef Vegetable Soup
Ingredients:
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
4 cups beef broth
1 (14.5-ounce) can diced tomatoes
2 cups mixed vegetables (carrots, peas, green beans, and corn)
2 medium potatoes, diced
1 cup tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon olive oil
Directions:
Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
Add the chopped onion and garlic to the pot. Sauté for 3-4 minutes until softened.
Stir in the beef broth, diced tomatoes (with juice), tomato sauce, potatoes, and mixed vegetables.
Season with basil, oregano, smoked paprika, salt, and pepper. Stir to combine.
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the potatoes are tender.
Taste and adjust seasonings as needed before serving.
