🥗 Healthy Protein Salad Bowl
Ingredients
🥒 1 cup cucumber, diced
🍅 1 cup cherry tomatoes, halved
🥑 1 ripe avocado, sliced
🥚 2 hard-boiled eggs, halved
🥣 1 cup canned chickpeas, drained and rinsed
🌿 Fresh parsley or cilantro, chopped
🧂 Salt & black pepper, to taste
🌶️ A pinch of chili powder or paprika (optional)
🍋 Juice of half a lemon
🫒 1 tbsp olive oil
Instructions
1️⃣ In a bowl, arrange the diced cucumber, cherry tomatoes, chickpeas, and avocado slices.
2️⃣ Add the boiled eggs on top, cut into halves or quarters.
3️⃣ Sprinkle with salt, black pepper, and a little paprika or chili powder for extra flavor.
4️⃣ Drizzle with olive oil and lemon juice.
5️⃣ Garnish with fresh parsley or cilantro.
6️⃣ Serve immediately and enjoy your healthy salad!
