
Healthy Protein Salad Bowl
Ingredients

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

2 hard-boiled eggs, halved

1 cup canned chickpeas, drained and rinsed

Fresh parsley or cilantro, chopped

Salt & black pepper, to taste

A pinch of chili powder or paprika (optional)

Juice of half a lemon

1 tbsp olive oil
Instructions

In a bowl, arrange the diced cucumber, cherry tomatoes, chickpeas, and avocado slices.

Add the boiled eggs on top, cut into halves or quarters.

Sprinkle with salt, black pepper, and a little paprika or chili powder for extra flavor.

Drizzle with olive oil and lemon juice.

Garnish with fresh parsley or cilantro.

Serve immediately and enjoy your healthy salad!
