Ingredients
For the choux pastry:
• 1/2 cup (1 stick) unsalted butter
• 1 cup water
• 1 cup all-purpose flour
• 1/4 teaspoon salt
• 4 large eggs
For the filling:
• 1 cup heavy cream
• 2 tbsp powdered sugar
• 1 tsp vanilla extract
Instructions
Preheat oven to 400°F (200°C), line a baking sheet with parchment paper.
Melt butter in water over medium heat. Bring to a boil, add flour and salt. Stir until a ball forms.
Remove from heat, cool slightly, add eggs one at a time, mixing well until smooth.
Pipe or spoon dough onto the baking sheet, bake for 20-25 minutes until golden. Let cool.
Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
Cut cooled puffs in half, fill with whipped cream.
