Ingredients:
2 lbs baby potatoes (halved)
6 slices bacon (chopped)
3 tablespoons olive oil
2 tablespoons honey
1 teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon fresh thyme (or 1 teaspoon dried)
¼ cup grated Parmesan cheese (optional)
1 tablespoon chopped fresh parsley (for garnish)
Directions:
Preheat your oven to 400°F (200°C).
In a large bowl, toss the halved baby potatoes with olive oil, honey, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
Spread the potatoes onto a lined baking sheet in an even layer.
Scatter the chopped bacon pieces over the potatoes.
Roast for 35-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
Sprinkle with fresh thyme and Parmesan cheese (if using) and return to the oven for another 5 minutes.
Remove from the oven, garnish with fresh parsley, and serve hot.
