Honey Garlic Beef Tenderloin with Crispy Smashed Potatoes
Ingredients
For the beef tenderloin:
1 (2 lb) beef tenderloin roast
2 tablespoons olive oil
3 cloves garlic, minced
¼ cup honey
¼ cup soy sauce
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon fresh thyme leaves
½ teaspoon black pepper
½ teaspoon salt
For the crispy smashed potatoes:
1 ½ lbs baby potatoes
3 tablespoons unsalted butter, melted
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon fresh thyme leaves
Salt and black pepper, to taste
Instructions
Beef Tenderloin:
Preheat oven to 400°F (200°C). Pat the beef tenderloin dry and season it with salt and pepper.
Sear the beef: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side.
Prepare the glaze: In a small bowl, whisk together honey, soy sauce, balsamic vinegar, Dijon mustard, garlic, and thyme.
Roast the beef: Brush half of the glaze over the beef tenderloin, then transfer the skillet to the oven. Roast for 25-30 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.
Rest and glaze: Remove from the oven, tent with foil, and let rest for 10 minutes. Brush with the remaining glaze before slicing.
Crispy Smashed Potatoes:
Boil the potatoes: In a large pot of salted water, boil the baby potatoes until fork-tender, about 15-20 minutes. Drain and let cool slightly.
Smash the potatoes: Preheat oven to 425°F (220°C). Place potatoes on a baking sheet lined with parchment paper. Gently smash each one with a fork or potato masher.
Season and roast: Mix melted butter, olive oil, garlic, thyme, salt, and pepper. Drizzle over the smashed potatoes. Roast for 20-25 minutes until crispy and golden brown.
Serve: Plate the sliced beef tenderloin with the crispy smashed potatoes, drizzling any extra glaze over the beef.
