Honey Mustard Chicken with Roasted Asparagus and Cheese
Ingredients:
* 4 chicken breasts
* 4 tbsp honey
* 3 tbsp Dijon mustard
* 2 garlic cloves, minced
* 500g asparagus
* 4 medium potatoes
* Olive oil
* Salt and pepper to taste
* Grated cheese (cheddar, mozzarella, or your favorite)
Instructions:
1. Prepare the Chicken: Preheat your oven to 200°C (400°F). In a bowl, mix honey, Dijon mustard, and minced garlic. Season with salt and pepper. Place chicken breasts in a baking dish and coat them with the honey mustard mixture.
2. Roast the Asparagus and Potatoes: Wash and trim the asparagus. Chop the potatoes into bite-sized pieces. Toss asparagus and potatoes with olive oil, salt, and pepper on a separate baking tray.
3. Bake: Place both trays in the oven. Bake the chicken for about 20-25 minutes, or until cooked through. Bake the asparagus and potatoes for about 25-30 minutes, or until the potatoes are tender and slightly golden.
4. Add Cheese: During the last 5 minutes of baking, sprinkle grated cheese over the chicken breasts.
5. Serve: Once the chicken is cooked and the cheese is melted, serve the honey mustard chicken with the roasted asparagus and potatoes. Enjoy!
