Gertrudeโ€™s Key Lime Pound Cakeย ๐Ÿ‹๐Ÿฐ

Ingredients:

For the Cake:

1 cup unsalted butter, softened
2 ยฝ cups granulated sugar
5 large eggs
3 cups all-purpose flour
ยฝ tsp baking soda
ยฝ tsp salt
1 cup sour cream
ยผ cup fresh key lime juice
1 tbsp key lime zest
1 tsp vanilla extract
A few drops of green food coloring (optional, for color)

For the Glaze:

1 ยฝ cups powdered sugar
2-3 tbsp key lime juice
1 tsp key lime zest

Instructions:

1. Prepare the Cake:

Preheat oven to 325ยฐF (163ยฐC) and grease a bundt pan.
In a large bowl, cream together butter and sugar until light and fluffy.

Add eggs, one at a time, mixing well after each addition.

In another bowl, whisk together flour, baking soda, and salt.

Alternately add the dry ingredients and sour cream to the butter mixture, beginning and ending with the dry ingredients.

Stir in key lime juice, zest, vanilla, and food coloring (if using).

Pour the batter into the bundt pan and bake for 75-85 minutes, or until a toothpick inserted comes out clean.

Let cool in the pan for 15 minutes, then transfer to a wire rack.

2. Make the Glaze:

Whisk together powdered sugar, key lime juice, and zest until smooth.
Drizzle over the cooled cake and let it set.

Serving Tip:

Garnish with extra lime zest or thin lime slices for a fresh citrus touch!
