Ingredients
Salad:
2 large green apples, diced
1 cup fresh or dried cranberries
1/2 cup pecans, roughly chopped
1/2 cup walnuts, roughly chopped (optional)
1/4 cup raisins (optional)
Dressing:
3 tbsp olive oil
2 tbsp honey
1 tbsp lemon juiceΒ
1/2 tsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper
Instructions
Prepare the Dressing:
In a small bowl, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and black pepper. Adjust the seasoning to taste.
Assemble the Salad:
In a large mixing bowl, combine diced apples, cranberries, pecans, and walnuts (if using). Add raisins if desired.
Toss and Serve:
Pour the dressing over the salad and toss gently until evenly coated.
Serve immediately or refrigerate for 10β15 minutes for the flavors to meld together.
