Irresistible Boston Cream Pie Cupcakes

These Boston Cream Pie Cupcakes are a delightful twist on the classic dessert, featuring a moist vanilla cupcake, creamy filling, and rich chocolate ganache topping.

Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 cup vanilla pudding
1 cup heavy cream
1 cup semi-sweet chocolate chips

Instructions:
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners to prepare for baking.
In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set the dry mixture aside.
In a large bowl, use a hand or stand mixer to beat the butter and sugar until the mixture is light and fluffy. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
Gradually alternate adding the dry ingredients and the milk to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined; avoid overmixing.
Evenly divide the batter among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack.
Once the cupcakes are fully cooled, cut a small circle out of the center of each cupcake using a knife or cupcake corer. Fill each cavity with vanilla pudding, then replace the top portion to cover the filling.
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and pour the hot cream over the chocolate chips in a heatproof bowl. Let the mixture sit for 5 minutes, then stir until smooth and glossy to create the ganache.
Spoon the chocolate ganache over the top of each cupcake, allowing it to drip down the sides. Let the ganache set at room temperature or in the refrigerator before serving.
