A light and flavorful soup perfect for a cozy meal.

Ingredients:

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup uncooked orzo pasta
4 cups chicken broth
1 lemon, zested and juiced
1/4 cup fresh parsley, chopped
Salt and pepper to taste

Instructions:
Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
Cook the chicken: Add the chicken to the pot and cook until browned.
Add broth and orzo: Pour in chicken broth and add orzo. Bring to a boil, then reduce heat and simmer until orzo is cooked through.
Season and serve: Stir in lemon zest and juice, parsley, salt, and pepper. Serve hot.

Tips:
For a creamier soup, you can add a splash of heavy cream or Greek yogurt.
You can also add vegetables like spinach, carrots, or celery to the soup.
Serve with a side of crusty bread or a sprinkle of Parmesan cheese.
