Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
Zest and juice of 1 lemon
1/2 tsp Italian seasoning
Salt and pepper, to taste
1/2 tsp paprika
3 tbsp butter, divided
3 cloves garlic, minced
Fresh parsley, chopped, for garnish
For the Linguine:
8 oz linguine
2 tbsp butter
3/4 cup grated Parmesan cheese
1/2 cup heavy cream
Salt and pepper, to taste
1/2 tsp garlic powder
Fresh parsley, chopped, for garnish
Directions:
In a small bowl, combine the lemon zest, lemon juice, Italian seasoning, paprika, salt, and pepper. Toss the chicken pieces in the mixture and let them marinate for 10-15 minutes.
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the marinated chicken pieces and cook for 6-8 minutes until the chicken is fully cooked. Add the minced garlic and cook for another 1-2 minutes, stirring frequently, until fragrant.
Remove the chicken from the skillet and set aside. Add the remaining 2 tablespoons of butter to the skillet and melt over medium heat. Add the linguine and cook according to the package instructions, draining and setting aside.
In the same skillet, add the heavy cream, Parmesan cheese, garlic powder, salt, and pepper. Stir until the sauce is creamy and smooth.
Toss the cooked linguine into the sauce, then return the chicken to the skillet and mix until everything is well coated.
Garnish with fresh chopped parsley before serving.
