Ingredients
• 4 boneless, skinless chicken breasts
• 2 tablespoons olive oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper (to taste)
• 1 tablespoon unsalted butter
• 3 cloves garlic (minced)
• 1 cup heavy cream
• 1/2 cup chicken broth
• 1/2 cup sun-dried tomatoes (chopped)
• 1/3 cup grated Parmesan cheese
• 1/2 teaspoon red pepper flakes (optional, for heat)
• 1 teaspoon Italian seasoning
• 8 ounces fettuccine, bow-tie farfalle or spaghetti (cooked per package instructions)
• Fresh basil (chopped, for garnish)
Instructions
1. Prepare the Chicken
◦ Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
◦ Heat olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown and fully cooked. Remove and set aside.
2. Make the Sauce
◦ In the same skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
◦ Stir in the heavy cream and chicken broth. Let it simmer for 2-3 minutes.
◦ Add the sun-dried tomatoes, Parmesan cheese, red pepper flakes (if using), and Italian seasoning. Mix well and let the sauce thicken slightly (3-4 minutes).
3. Combine Chicken and Sauce
◦ Return the chicken breasts to the skillet, coating them with the creamy sauce. Let them simmer for another 5 minutes, so the flavors meld together beautifully.
4. Serve with Pasta
◦ Toss the cooked pasta into the skillet to coat it in the sauce, or plate the pasta and spoon the sauce with chicken on top.
◦ Garnish with fresh basil and extra Parmesan cheese if desired.
