One-Pan Sweet and Tangy BBQ Sausage Rice

Ingredients:

– 1 lb smoked sausage, sliced
– 1 cup rice (uncooked)
– 1 can (15 oz) black beans, drained and rinsed
– 1 cup corn (frozen or canned)
– 1 cup bell peppers, diced
– 1 onion, diced
– 2 cups chicken or vegetable broth
– 1/2 cup BBQ sauce (your choice)
– 1 tsp garlic powder
– 1 tsp paprika
– Salt and pepper to taste
– Optional: chopped green onions or parsley for garnish

Directions:

1. In a large skillet or pan, sauté the sliced sausage over medium heat until browned. Remove and set aside.
2. In the same pan, add onion and bell peppers, cooking until softened.
3. Stir in the rice, garlic powder, paprika, and any additional salt and pepper. Cook for about 1 minute.
4. Add the black beans, corn, chicken broth, and BBQ sauce. Stir well to combine.
5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
6. Stir in the cooked sausage and let sit for a few minutes before serving. Garnish with green onions or parsley if desired.
