Peach Cobbler Pound Cake
Ingredients:
For the Cake:
1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup whole milk
For the Peach Topping:
2 cups fresh or canned peaches, sliced
1/2 cup brown sugar
1 teaspoon cinnamon
2 tablespoons unsalted butter, melted
For the Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions:
1. Prepare the Peaches:
In a bowl, toss the peaches with brown sugar, cinnamon, and melted butter. Set aside.
2. Make the Cake Batter:
Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
In a large bowl, cream together the butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until smooth.
3. Assemble the Cake:
Arrange the peach mixture at the bottom of the greased bundt pan.
Pour the cake batter over the peaches, smoothing the top.
4. Bake the Cake:
Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.
5. Prepare the Glaze:
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
Drizzle over the cooled cake.
