Pimento Cheese Recipe 



Ingredients:
โ 2 cups freshly grated extra-sharp Cheddar cheese 

โ 8 ounces cream cheese, cut into 1โ cubes and softened at room temperature 

โ 4 ounces pimento peppers, well-drained and chopped if in strips 

โ 2 tablespoons mayonnaise (Dukeโs or Sir Kensingtonโs both work well) 

โ ยผ teaspoon garlic powder 

โ ยผ teaspoon onion powder 

โ ยผ teaspoon ground cayenne pepper (adjust or omit if you prefer less spice) 

โ ยฝ medium jalapeรฑo pepper, ribs and seeds removed, minced (about 1 tablespoon; optional) 

โ Freshly ground black pepper, to taste 

โ Salt, to taste 

Instructions:
1. In a large bowl or the bowl of a stand mixer, combine the Cheddar cheese, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne, jalapeรฑo (if using), and a few grinds of black pepper
.

2. Beat the ingredients together using a hand mixer, stand mixer, or a sturdy spoon or spatula. Mix until everything is evenly combined
.

3. Taste the mixture and adjust seasonings as needed. Add black pepper for a sharper kick, salt for more flavor, or a pinch of cayenne for extra heat
.

4. Spoon the mixture into a serving bowl. Serve immediately or refrigerate for up to 1 week. If chilled, let it soften at room temperature for about 30 minutes before serving
