Ingredients:
1 pork knuckle, cleaned and cut into pieces
1 large daikon radish, peeled and cut into chunks
1 piece of ginger, sliced
3-4 cloves garlic, crushed
10-12 cups of water
Salt and pepper to taste
Green onions, chopped (for garnish)
Goji berries (optional, for garnish)
Instructions:
1. Blanch the pork knuckle:
In a large pot, bring water to a boil. Add the pork knuckle pieces and boil for 5 minutes. Drain and rinse the pork knuckle under cold water to remove any impurities.
2. Simmer the soup:
In a clean pot, add the blanched pork knuckle, daikon radish, ginger, garlic, and water. Bring to a boil, then reduce the heat to low. Simmer for 2-3 hours, or until the pork knuckle is tender and the daikon radish is soft.
3. Season and garnish:
Season the soup with salt and pepper to taste. Garnish with chopped green onions and goji berries, if desired.
