Ingredients:
1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar
1/2 cup unsalted butter, melted
2 cups cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup pineapple puree
2 cups whipped cream
1 cup pineapple chunks (for topping)
Directions:
Preheat the oven to 325°F (160°C).
In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
In a large mixing bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until well combined.
Fold in the pineapple puree and whipped cream until the mixture is light and fluffy.
Pour the cream cheese mixture over the crust in the springform pan, spreading evenly.
Refrigerate for at least 4 hours or until set.
Before serving, top with pineapple chunks for garnish.
