Mediterranean Delight: Creamy Ricotta with Savory Olives, Crunchy Almonds, and Zesty Lemon

Ingredients:

1 cup ricotta cheese
1/2 cup mixed olives, pitted and roughly chopped
1/4 cup almonds, toasted and chopped
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
Salt and pepper to taste
Fresh basil or parsley for garnish
Crackers or bread for serving

Directions:

In a medium bowl, combine the ricotta cheese, chopped olives, toasted almonds, lemon zest, and lemon juice.
Drizzle in the olive oil and season with salt and pepper to taste.
Gently mix until all ingredients are well incorporated, being careful not to overmix to maintain the creamy texture of the ricotta.
