Shamrock Shake Dessert Lasagna
Ingredients:
For the crust:
24 chocolate sandwich cookies (like Oreos), crushed
1/4 cup unsalted butter, melted
For the mint cheesecake layer:
8 oz (227g) cream cheese, softened
1/4 cup granulated sugar
1 teaspoon peppermint extract
Green food coloring (optional)
1 1/2 cups whipped topping (like Cool Whip)
For the pudding layer:
1 package (3.4 oz) instant vanilla pudding mix
1 3/4 cups cold milk
1/4 teaspoon peppermint extract
Green food coloring (optional)
For the topping:
1 1/2 cups whipped topping
Crushed chocolate sandwich cookies or chocolate shavings for garnish
Mini chocolate chips or sprinkles for garnish
Directions:
1. Crush the chocolate sandwich cookies in a plastic bag until they are fine crumbs.
2. Mix the cookie crumbs with melted butter in a bowl until well combined.
3. Press the cookie mixture into the bottom of a 9×13-inch dish to form the crust.
4. In a separate bowl, beat the softened cream cheese, sugar, and peppermint extract until smooth.
5. Add green food coloring if desired and fold in the whipped topping gently.
6. Spread the mint cheesecake mixture over the cookie crust evenly.
7. In another bowl, whisk together the instant vanilla pudding mix, cold milk, peppermint extract, and green food coloring if desired.
8. Pour the pudding mixture over the mint cheesecake layer and spread it out.
9. Top with a layer of whipped topping and spread it evenly.
10. Garnish with crushed chocolate sandwich cookies, chocolate shavings, mini chocolate chips, or sprinkles.
11. Chill the dessert lasagna in the refrigerator for at least 2 hours before serving.
