Ingredients:
For the Tortellini and Shrimp:
12 oz cheese-filled tortellini (fresh or frozen)
1 lb shrimp (peeled and deveined)
1 tbsp olive oil
1 tsp smoked paprika
Salt and black pepper (to taste)
For the Garlic Butter Sauce:
4 tbsp unsalted butter
3 cloves garlic (minced)
½ cup chicken broth
½ cup heavy cream
1 tbsp lemon juice
2 tbsp Parmesan cheese (grated)
Fresh parsley (chopped, for garnish)
Instructions:
1️⃣ Cook the Tortellini:
Bring a large pot of salted water to a boil.
Cook the tortellini according to package instructions until tender.
Drain and set aside.
2️⃣ Cook the Shrimp:
Heat olive oil in a large skillet over medium-high heat.
Season shrimp with smoked paprika, salt, and black pepper.
Sear the shrimp for 2–3 minutes per side until pink and opaque.
Remove from the skillet and set aside.
3️⃣ Make the Garlic Butter Sauce:
In the same skillet, melt butter over medium heat.
Add minced garlic and sauté for 1–2 minutes until fragrant.
Stir in chicken broth, heavy cream, and lemon juice. Bring the mixture to a gentle simmer.
Whisk in grated Parmesan cheese until the sauce is smooth and slightly thickened, about 2–3 minutes.
4️⃣ Combine and Toss:
Add the cooked tortellini and shrimp to the skillet with the sauce.
Toss gently to coat everything evenly in the garlic butter sauce.
5️⃣ Serve:
Plate the shrimp and tortellini, garnished with freshly chopped parsley.
Serve immediately with extra Parmesan and lemon wedges, if desired.
