Sock It to Me Pound Cake

Ingredients:

For the Cake:

3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup (2 sticks) unsalted butter, softened
2 ½ cups granulated sugar
6 large eggs
1 cup sour cream
2 teaspoons vanilla extract

For the Streusel Filling:

1 cup chopped pecans
2 teaspoons cinnamon
2 tablespoons brown sugar

For the Glaze:

1 cup powdered sugar
2-3 tablespoons milk or heavy cream
1 teaspoon vanilla extract

Instructions:

Preheat Oven & Prepare Pan:

Preheat your oven to 325°F (163°C).
Grease and flour a Bundt pan.

Make the Batter:

In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar together until light and fluffy.
Add eggs one at a time, mixing well after each addition.
Stir in the sour cream and vanilla.

Gradually add the dry ingredients, mixing until just combined.

Prepare the Streusel Filling:

In a small bowl, mix the pecans, cinnamon, and brown sugar.

Layer the Cake:

Pour half of the cake batter into the prepared Bundt pan.
Sprinkle the streusel filling evenly over the batter.
Pour the remaining batter over the filling and smooth the top.

Bake the Cake:

Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 10-15 minutes before transferring to a wire rack.

Make the Glaze:

Whisk together powdered sugar, vanilla, and milk until smooth.
Drizzle over the cooled cake.
