Spicy, creamy, and full of flavor—this Rotel Hot Sausage Dip is a crowd favorite!
Ingredients:
1 lb ground hot sausage
1 (10 oz) can Rotel diced tomatoes with green chilies
1 (8 oz) package cream cheese, softened
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1 tsp garlic powder
1 tsp onion powder
½ tsp cayenne pepper (optional for extra heat)
Tortilla chips, crackers, or veggies for serving
Instructions:
Step 1: Brown the Sausage
In a skillet over medium heat, brown the ground sausage until fully cooked, breaking it apart with a spoon. Drain any excess grease.
Add the Rotel diced tomatoes with green chilies (with juices) to the pan, stir to combine, and cook for 2 minutes.
Step 2: Cream Cheese & Cheese
Reduce heat to low and add the cream cheese to the pan. Stir until the cream cheese has melted and is fully incorporated into the mixture.
Add the shredded cheddar and Monterey Jack cheeses. Stir until the cheese is melted and the dip is smooth.
Step 3: Season & Serve
Stir in the garlic powder, onion powder, and cayenne pepper (if using).
Continue to cook on low for another 2-3 minutes until everything is well combined and heated through.
Serve warm with tortilla chips, crackers, or veggies for dipping.
Storage & Reheating:
Fridge: Store leftovers in an airtight container for up to 3 days.
Freezer: You can freeze the dip for up to 2 months (without the chips).
Reheat: Warm on the stove or in the microwave, adding a splash of milk or cream to reach desired consistency.
