Spicy Shrimp and Avocado Rice Bowl

Ingredients
1 lb shrimp, peeled and deveined
2 cups cooked rice (white, brown, or jasmine)
1 avocado, sliced
1 tbsp olive oil
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp cayenne pepper (optional, for extra heat)
Salt and pepper, to taste
1 lime, juiced and zested
Fresh cilantro, chopped (for garnish)
Sesame seeds (optional, for garnish)
Directions
In a bowl, toss the shrimp with olive oil, chili powder, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque.
Assemble the rice bowls: Divide the cooked rice among bowls. Top with the cooked shrimp and avocado slices.
Drizzle with lime juice and sprinkle with lime zest. Garnish with fresh cilantro and sesame seeds, if desired.
