Sriracha Honey Salmon Bowls with Roasted Cauliflower
Ingredients:
For the Salmon:
1 pound salmon fillet, cut into 4 pieces
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon sriracha
1/2 teaspoon grated ginger
1/4 teaspoon garlic powder
1/4 teaspoon red pepper flakes (optional)
For the Cauliflower:
1 head cauliflower, cut into florets
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Instructions:
Make the Sriracha Honey Glaze: In a small bowl, whisk together soy sauce, honey, sriracha, ginger, garlic powder, and red pepper flakes (if using).
Marinate the Salmon: Place the salmon fillets in a shallow dish. Pour the sriracha honey glaze over the salmon and let it marinate for at least 30 minutes, or up to 2 hours.
Roast the Cauliflower: Preheat oven to 400°F (200°C). Toss the cauliflower florets with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Spread them in a single layer on a baking sheet. Roast for 20-25 minutes, or until tender-crisp.
Cook the Salmon: Heat a large skillet over medium-high heat. Add the marinated salmon fillets and cook for 3-4 minutes per side, or until cooked through.
Assemble the Bowls: Divide the roasted cauliflower among bowls. Top with the cooked salmon. Drizzle with any remaining sriracha honey glaze.
Tips:
You can use any type of salmon you like for this recipe.
For a spicier dish, add more sriracha or red pepper flakes to the marinade.
