Strawberry Cheesecake Crumbl Cookies

Ingredients:

For the Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

For the Cheesecake Frosting:
8 oz cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
½ cup heavy whipping cream

For the Crumble Topping:
½ cup all-purpose flour
¼ cup brown sugar
¼ cup unsalted butter, melted

For the Topping:
1 cup fresh strawberries, diced

Directions:

Make the Cookies: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, cream together butter and sugar until light and fluffy.

Add egg and vanilla, mixing well. Gradually add flour, baking powder, and salt until combined.

Roll dough into balls, slightly flatten them, and place on the baking sheet. Bake for 10-12 minutes, or until edges are set. Let cool completely.

Prepare the Cheesecake Frosting: In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add heavy whipping cream and beat until fluffy.

Make the Crumble Topping: Mix flour, brown sugar, and melted butter until crumbly. Toast in a 350°F oven for 5 minutes until golden brown.

Assemble the Cookies: Spread cheesecake frosting over each cooled cookie. Sprinkle with crumble topping and fresh diced strawberries.
