Strawberry Dream Cheesecake

Ingredients:
Crust:
2 cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
½ cup sour cream
1 tablespoon lemon juice
Strawberry Swirl Topping:
1 ½ cups fresh strawberries, hulled and pureed
¼ cup granulated sugar
1 teaspoon cornstarch
1 tablespoon water
4. Directions:
Prepare the Crust: Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into a 9-inch springform pan. Bake for 10 minutes, then let cool.
Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract, sour cream, and lemon juice.
Prepare the Strawberry Swirl: In a saucepan, heat strawberry puree, sugar, and cornstarch mixed with water. Simmer until slightly thickened. Let cool.
Assemble the Cheesecake: Pour the cheesecake filling over the crust. Spoon the strawberry mixture over the top and swirl with a toothpick or knife.
Bake: Place the springform pan in a water bath and bake for 50-60 minutes, until the center is slightly jiggly. Turn off the oven and let it sit inside with the door slightly open for 1 hour.
Chill & Serve: Refrigerate for at least 4 hours or overnight before slicing. Garnish with fresh strawberries if desired.
