1 ripe avocado, sliced
1 cup cherry tomatoes, halved
Β½ cup cooked sweet corn (fresh or canned)
1 large egg
1 cup fresh arugula or spinach
1 tsp olive oil (for frying the egg)
1 tsp sesame seeds (optional, for garnish)
1 tbsp chopped parsley or cilantro (for garnish)
Salt and pepper, to taste

Prepare the Base: Arrange sliced avocado, cherry tomatoes, cooked corn, and arugula in sections around a bowl.
Cook the Egg: Heat olive oil in a small non-stick skillet over medium heat. Crack the egg into the skillet and cook until the white is set, but the yolk remains runny (or to your preference). Sprinkle with salt and pepper.
Assemble the Bowl: Place the fried egg in the center of the bowl.
