A nutrient-dense, antioxidant-rich smoothie bowl for a healthy start to your day!

Ingredients (Serves 1-2)

*2 frozen bananas, peeled and sliced

*2 kiwifruit, peeled and sliced (plus ½ extra for topping)

*60g baby spinach

*20g chopped kale leaves

*1 tbsp almond butter

*1 tbsp chia seeds (plus ½ tsp extra for garnish)

*500ml (2 cups) So Good Cashew Unsweetened Milk

*1 tbsp unsweetened coconut flakes

*1 tbsp activated buckwheat (buckinis, see notes)

*Handful of mixed berries (for topping)

Instructions

1. Blend the base:

*In a high-speed blender, combine frozen bananas, kiwifruit, spinach, kale, almond butter, chia seeds, and cashew milk.

*Blend until smooth and creamy.
If the texture is too thick, add a splash of extra cashew milk.

2. Serve the smoothie bowl:

*Pour the smoothie mixture into a bowl.

3. Add toppings:

*Garnish with sliced kiwifruit, coconut flakes, activated buckwheat, extra chia seeds, and mixed berries.

4. Enjoy immediately!
