Sweet Alabama Pecan Bread
Ingredients:
1 cup granulated sugar
1 cup brown sugar, packed
4 large eggs, beaten
1 cup vegetable oil
1 1/2 cups self-rising flour
1 teaspoon vanilla extract
2 cups chopped pecans
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
In a large mixing bowl, combine the granulated sugar, brown sugar, and beaten eggs. Mix thoroughly until the sugars are well incorporated with the eggs.
Gradually add the vegetable oil and vanilla extract to the sugar and egg mixture, mixing until all ingredients are well blended.
Stir in the self-rising flour until just combined, making sure not to overmix.
Fold in the chopped pecans, ensuring they are evenly distributed throughout the batter.
Pour the batter into the prepared baking dish, smoothing out the top with a spatula.
Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve. This sweet and nutty pecan bread is a delightful treat, perfect for breakfast, as a snack, or served as a dessert.
