CHOCOLATE MOUSSE
For the mousse:
2 bars Simple Truth Organic Dark Chocolate, finely chopped
4 Simple Truth Organic Egg Yolks
¼ cup Simple Truth Organic Cane Sugar
2 cups Simple Truth Organic Heavy Cream, divided
2 tsp Simple Truth Organic Vanilla Extract
1 tsp Simple Truth Organic Instant Coffee
¼ tsp salt
For the topping:
¾ cup Simple Truth Organic Heavy Cream
¼ cup Simple Truth Organic Powdered Sugar, sifted
½ tsp Simple Truth Organic Vanilla Extract
Simple Truth Organic Strawberries
Simple Truth Organic Dark Chocolate Shavings
To make the mousse:
Place the chopped chocolate in a large heatproof bowl. In a stand mixer, beat the egg yolks and granulated sugar on medium-high speed until the mixture is thick, smooth, and deeply yellow. Set aside.
In a saucepan over medium heat, warm 1 cup of the cream just until it comes to a simmer (do not boil). Remove the pan from heat and very gradually whisk half of the hot cream into the egg yolk /sugar mixture, whisking constantly. Whisk in ¼ cup cold heavy cream. Transfer the egg mixture back to the saucepan with the remaining warm cream, whisk well, and cook over medium heat, stirring constantly, until the mixture is thick enough to easily coat the back of a spoon. Do not allow to boil.
Slowly pour the warm mixture over the chopped chocolate. Stir until the chocolate is smooth and melted, then whisk in the vanilla, coffee granules, and salt. Cover with plastic wrap and refrigerate until cold, about 1 to 2 hours.
Once the chocolate mixture is chilled, beat the remaining 3/4 cup of the heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate mixture until evenly combined. Spoon or pipe the mousse into dessert cups. Wrap and chill until ready to serve.
To make the topping:
In the bowl of a stand mixer fitted with the whisk attachment, beat the heavy cream, powdered sugar, and vanilla together until medium-stiff peaks form. Spoon on top of the mousse, top with berries and chocolate shavings, and enjoy!
