Preheat & Prep – Preheat oven to 160°C (320°F). Grease and line an 8×8-inch (20×20 cm) baking pan with parchment paper.
Mix Dry Ingredients – In a bowl, sift together cake flour, cocoa powder, baking soda, and salt. Set aside.
Whip the Egg Whites – In a large bowl, beat egg whites until soft peaks form. Gradually add 100g sugar, beating until stiff peaks form. Set aside.
Prepare the Wet Ingredients – In another bowl, whisk egg yolks and 50g sugar until pale and thick. Mix in vegetable oil, milk, and vanilla extract.
Combine Wet & Dry – Gently fold the dry ingredients into the egg yolk mixture until just combined.
Incorporate Egg Whites – Fold one-third of the whipped egg whites into the batter to lighten it. Then gently fold in the remaining egg whites until fully combined.
Bake – Pour batter into the prepared pan and smooth it out. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Whip the Cream – Beat heavy cream, powdered sugar, cocoa powder, vanilla extract, and a pinch of salt until stiff peaks form.
Prepare the Ganache – Place chopped chocolate in a heatproof bowl. Pour hot cream over it and let sit for a minute, then stir until smooth. Mix in butter until glossy.
Assemble the Cake – Slice the cooled cake into two equal layers. Spread a generous layer of whipped cream over the bottom layer, then place the top layer over it.
Finish with Ganache – Pour warm ganache over the cake, letting it drip over the sides for an irresistible finish.
Chill & Serve – Refrigerate for at least 30 minutes before slicing and serving.
