Vanilla Chocolate Chip Loaf
Ingredients:
• 2 cups all-purpose flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1/2 cup unsalted butter, softened
• 3/4 cup granulated sugar
• 2 large eggs
• 2 tsp vanilla extract
• 1 cup sour cream or Greek yogurt
• 3/4 cup mini or regular chocolate chips
Instructions:
Preheat and prepare:
Set the oven to 350°F (175°C). Grease and flour an 8×4-inch or 9×5-inch loaf pan.
Mix dry ingredients:
In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream butter and sugar:
Using an electric mixer, beat the butter and sugar on medium speed for about 2-3 minutes until fluffy and pale.
Add eggs and vanilla:
Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
Combine wet and dry ingredients:
Gradually add 1/3 of the dry mixture, followed by half of the sour cream. Repeat, alternating, and finish with the dry ingredients. Mix just until combined.
Fold in chocolate chips:
Gently stir in the chocolate chips with a spatula, ensuring even distribution.
Bake:
Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Cool and serve:
Let the loaf rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
