Pineapple Glaze:
1 cup R.W. Knudsen Organic Just Pineapple Juice
1/4 cup soy sauce
1/3 cup dark brown sugar
1/4 cup sweet chili sauce
1 tbsp fresh ginger, finely minced
1 tsp red chili pepper flakes, optional
1 tbsp cornstarch
Skewers:
1 lb boneless chicken, cut into bite sized pieces
1 cup fresh pineapple, cut into large chunks
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1 tbsp vegetable oil
salt and pepper to taste
In a small stock pot over medium heat combine glaze ingredients and bring to a boil. Reduce heat to low and let simmer gently for five minutes, stirring often. Pour sauce into a heatproof jar, let cool then refrigerate until ready to use.
Preheat oven to 375ºF. Line a baking sheet with tinfoil and set aside. Thread skewers with chicken, pineapple, onion, red and green pepper pieces in any combination until skewer is full. Set onto baking sheet, drizzle with vegetable oil and sprinkle with salt and pepper. Pour 1/2 cup of the glaze into a small bowl. Bake skewers in the oven for 10 minutes then remove the pan and liberally brush the skewers with glaze. Return to the oven and cook another five minutes then remove and brush with more glaze. Cook five more minutes until browned and chicken is done. Serve hot with reserved glaze. Enjoy!
