Ingredients:
For the Battered Fish Fingers:
1 lb white fish fillets (like cod or haddock), cut into finger-sized strips
1 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
2 large eggs
1 cup breadcrumbs (Panko for extra crunch)
Vegetable oil, for frying
For the Homemade Chips:
4 large russet potatoes, peeled and cut into thick strips
2 tablespoons olive oil
Salt, to taste
Optional: 1 teaspoon paprika or garlic powder
Instructions:
Prepare the Chips:
Preheat your oven to 425°F (220°C).
Soak the potato strips in cold water for 30 minutes to remove excess starch. Drain and pat dry with paper towels.
Toss the potato strips in a bowl with olive oil, salt, and any additional seasonings (like paprika or garlic powder).
Spread the potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.
Prepare the Battered Fish Fingers:
In a shallow bowl, mix the flour with paprika, garlic powder, onion powder, salt, and pepper.
In another bowl, beat the eggs. Place breadcrumbs in a third bowl.
Dredge each fish strip in the seasoned flour, dip into the beaten eggs, and then coat with breadcrumbs, pressing gently to adhere.
Fry the Fish Fingers:
Heat vegetable oil in a large skillet over medium-high heat. Fry the fish fingers in batches, for 2-3 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.
