Zesty Lemonade Puppy Chow snack

Ingredients:

9 cups Rice Chex cereal

1 1/2 cups white chocolate chips

2 tablespoons unsalted butter

2 tablespoons lemon zest (freshly grated)

3 tablespoons lemon juice

1 1/2 cups powdered sugar

1/2 cup lemon-flavored instant pudding mix

Directions:

Place the Rice Chex cereal in a large mixing bowl and set aside.

In a microwave-safe bowl, combine the white chocolate chips, butter, lemon zest, and lemon juice. Microwave in 20-second intervals, stirring between each, until smooth and fully melted.

Pour the melted lemon-chocolate mixture over the Rice Chex cereal. Gently fold until all the cereal pieces are evenly coated.

In a large resealable plastic bag, combine the powdered sugar and lemon pudding mix. Add the coated cereal to the bag, seal, and shake well until the cereal is evenly coated in the sugary lemon mixture.

Spread the puppy chow onto a baking sheet lined with parchment paper and allow it to cool completely.

Transfer to a serving bowl or store in an airtight container.
