Ricotta Almond Pillows with Vanilla & Powdered Sugar 




🍴 Ingredients:
– 2 cups all-purpose flour
– 1/2 tsp baking powder
– 1/4 tsp salt
– 1 cup ricotta cheese, drained
– 1/2 cup powdered sugar (plus extra for dusting)
– 1/2 cup unsalted butter, softened
– 1 tsp vanilla extract
– 1/2 tsp almond extract
– 1 cup finely ground almonds (or almond flour)
– Optional: Sliced almonds for garnish

👩‍🍳 Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
4. Add the ricotta cheese, vanilla extract, and almond extract to the butter mixture, and mix until well combined.
5. Gradually incorporate the dry ingredients into the wet mixture until a soft dough forms. Gently fold in the ground almonds until evenly distributed.
6. Take a small piece of dough (about 1 tablespoon) and shape it into a pillow by rolling it into a ball and then flattening it slightly.
7. Place the formed pillows on the prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 15-20 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes.
9. Carefully transfer the cookies to a wire rack to cool completely. Once cooled, dust generously with powdered sugar and, if desired, top with sliced almonds for an extra touch.
